Lemon & Coconut Chicken Skewers
Hands-on time: 15 minutes; Cooking time: 10-12 minutes; serves: 4
Ingredients
4-5 red chillies, soaked
2 cloves garlic, crushed
¼ tsp jeera powder
¼ tsp dhania powder
1tsp ginger paste
A few blades of lemon grass*or ½ tsp lemon zest
Salt to taste
½ tsp freshly ground pepper
½ tsp olive oil
2tbsp coconut cream
Handful of freshly chopped dhania 4 medium skinless chicken breasts, each cut into or four strips
1. Make a paste with the chilies, garlic, jeera and dhania powder, ginger, lemon grass or zest, salt and pepper, drizzling a little olive oil so that the paste doesn’t get too dry.
2. Preheat the grill. Soak eight wooden skewers in water for 10 minutes or use mental skewers.
3. In a medium-sized mixing bowl whisk together the chili paste, coconut cream and dhania, add the chicken strips and stir well to coat.
4. Skewer the chicken stripes and grill for 10-12 minutes, turning and basting once or twice with oil until cooked and juices run clear when pierced.
5. Serve with a pot of dahi whipped with a little bit of marmalade or any other sour-sweet preserve and chili flakes. Also serve a tomato, cucumber and onion salad with it.
Each serving: 190 Calories, 5gm fat (4gm saturated). 3gm carbohydrates

Mixed Braised vegetables
Makes: 4-6 servings
½ kg mixed, cut vegetables (carrots, beans, cauliflower, baby corn, broccoli, leeks, cabbage and spring onions…)
1tbsp oil
1tsp sesame oil
1 large clove garlic, crushed
1 tsp fresh ginger grated
½ cup vegetable stock (you can use stock cubes)
2tbsp soy sauce
Salt to taste
2tsp corn flour
1tbsp cold water
1. Heat oil in a frying pan or wok. Add garlic, ginger and the vegetables. Fry for 2-3 minutes.
2. Add hot stock, soy sauce and salt. Cover and simmer for 4-5 minutes.
3. Tip in corn flour mixed with cold water and stir till the sauce thickens. Serve immediately.
